I think all of these weren't around when the game was first released, except for the waterslides. The Maurer spinner is close - as far as I can tell the first examples opened in 2003, which is one year after RCT2 was released. The B&M dive machine existed but not the floorless version.
RCT2 did a good job of covering most of the coasters that would have been of interest at the time of the game's release, but the default selection is a bit dated now. Unfortunately, there's no way to make custom track types so some rides can't be done very well - the Intamin LSM and RMC trains both require track merging to make full use of them.
