The answer to this riddle is:

Tachophobia

'Maxican' food.

This refers to two things. 1. Mexican food, which in this case is a taco. 2. Max = Maxlaam

I am afraid of

Being afraid of something is having a phobia.

Or did I just forget to add an H?

Add an H to Taco: Tacho.

And with these hints, it leads to Tachophobia by Maxlaam.

But Tachophobia is fear of speed not Mexican food...
