An inversion is an element that takes the riders heel over head, it's not the actual movement of going heel over head. Therefor 1 element can not be more than 1 inversion, and since a bananaroll is 1 element, the answer can never be 2.
As for the 1 vs. 0: Considering the fact that an inside tophead is an inversion, and this thing goes head over heels even more, I would deffinatly say that the correct answer is 1.

If you squint your eyes really hard, this Banana Roll looks similar to a Cobra Roll, which consists of 2 inverions, and if you look at it sideways, it almost looks like an Overbanked Turn, which is no inversions at all. So I could understand how modifying the shape of the two elements to produce this Banana could confuse some less fortunate individuals.

I say 1 at the most, it's too far inbetween an Inverted Tophat and a Cobra Roll.
